The Story of Dongpo Pork

Dongpo Pork traces its origins back to the Song Dynasty and is traditionally associated with the great poet and statesman Su Dongpo. Legend tells that while serving as a governor, Su Dongpo improved local flood control efforts. Grateful villagers gifted him pork. Instead of keeping it for himself, he instructed his cook to braise the pork slowly with wine and soy sauce, then distribute it among the workers who had labored on the project.
